Delicious Apple Crumble Cheesecake (Print Version)

# Ingredients:

→ Cookie Crust

01 - 200g digestive or graham crackers
02 - ½ teaspoon ground nutmeg
03 - 1.5 teaspoon ground cinnamon
04 - 1.5 tablespoon dark brown sugar
05 - 50g butter, melted

→ Apples and Crumble

06 - 150g apple, diced small (1-2 apples)
07 - 1 tablespoon granulated sugar
08 - 1 teaspoon ground cinnamon
09 - 100g all-purpose flour
10 - 80g dark brown sugar
11 - 70g butter, room temperature

→ Cheesecake

12 - 600g cream cheese, full fat, room temperature
13 - 200g granulated sugar
14 - 150g sour cream (14-18%), room temperature
15 - 1 tablespoon cornstarch
16 - 2 teaspoon vanilla extract
17 - 3 large eggs, room temperature

# Instructions:

01 - Preheat the oven to 160ºC/325ºF. In a food processor, blend the cookies, brown sugar, cinnamon, and nutmeg until fine. Add melted butter and blend again. Press the mixture into a 22cm springform pan lined with parchment paper, ensuring it's well-packed. Bake for 10 minutes, then let it cool.
02 - Dice the apples and toss them with granulated sugar and cinnamon. In another bowl, mix flour, brown sugar, and butter until crumbly. Set both toppings aside.
03 - Preheat the oven to 160ºC. Cream the cream cheese, then gradually add granulated sugar. Mix sour cream and cornstarch separately, then add to the cream cheese with vanilla extract. Add eggs one at a time. Pour the batter into the springform pan, top with apples and crumble.
04 - Place the springform pan in a water bath and bake for 1 hour and 20-30 minutes. Let it cool in the oven for 1 hour, then remove and cool completely on a rack. Chill in the fridge for at least 6 hours, preferably overnight.
