Sweet Glazed Apple Fritter Bites (Print Version)

# Ingredients:

→ For the Bites

01 - 1½ cups all-purpose flour
02 - 2 teaspoons baking powder
03 - ½ teaspoon kosher salt
04 - 2 teaspoons ground cinnamon
05 - ¼ cup unsalted butter, melted
06 - ¼ cup granulated sugar
07 - 1 large egg
08 - ½ teaspoon vanilla extract
09 - ½ cup unsweetened applesauce
10 - 1½ cups Honeycrisp or Gala apples, finely diced (about 2 medium)

→ For the Apple Cider Glaze

11 - 2 cups powdered sugar
12 - ⅓ cup plus 2 tablespoons apple cider or juice

# Instructions:

01 - Heat your oven to 400°F and give your baking sheet a good spray with nonstick cooking spray.
02 - In a medium bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.
03 - In a large bowl, whisk your melted butter and sugar together. Add in the egg, vanilla, and applesauce, whisking until everything's nice and smooth.
04 - Stir the dry ingredients into your wet ingredients just until mixed - don't overdo it! Then gently fold in those diced apples.
05 - Drop tablespoons of batter onto your prepared baking sheet, leaving some space between each. Bake for 10 minutes.
06 - While they're baking, whisk together your powdered sugar and apple cider until you've got a nice, pourable glaze.
07 - Switch to broiler after initial bake. Brush warm bites with some glaze, then broil 2-4 minutes, rotating pan until glaze bubbles up. Add remaining glaze and let set 15 minutes before serving.
