Heat your oven to 400°F and give your baking sheet a good spray with nonstick cooking spray.

In a medium bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.

In a large bowl, whisk your melted butter and sugar together. Add in the egg, vanilla, and applesauce, whisking until everything's nice and smooth.

Stir the dry ingredients into your wet ingredients just until mixed - don't overdo it! Then gently fold in those diced apples.

Drop tablespoons of batter onto your prepared baking sheet, leaving some space between each. Bake for 10 minutes.

While they're baking, whisk together your powdered sugar and apple cider until you've got a nice, pourable glaze.

Switch to broiler after initial bake. Brush warm bites with some glaze, then broil 2-4 minutes, rotating pan until glaze bubbles up. Add remaining glaze and let set 15 minutes before serving.
