Quick Homemade Fried Rice (Print Version)

# Ingredients:

→ The Basics

01 - 3 cups cooked white rice (day-old rice works best - it's less sticky!)
02 - 3 tablespoons sesame oil

→ Veggies & Aromatics

03 - 1 cup frozen peas and carrots, thawed
04 - 1 small onion, chopped
05 - 2 teaspoons minced garlic

→ Protein & Sauce

06 - 2 eggs, lightly beaten
07 - 1/4 cup soy sauce

# Instructions:

01 - Heat up that sesame oil in a large skillet or wok over medium-high heat until it's nice and hot.
02 - Toss in your thawed peas and carrots, chopped onion, and garlic. Give everything a good stir-fry until the vegetables are tender and smell amazing.
03 - Turn the heat down to medium-low. Push all those veggies to one side of the pan, and pour your beaten eggs into the empty space. Scramble them up until they're fully cooked.
04 - Now for the fun part - add your rice and soy sauce to the pan. Mix everything together really well, making sure the rice gets heated through and every grain is coated in that tasty sauce.
05 - Once everything's hot and well mixed, you're done! Serve it up right away while it's still steaming.

# Notes:

01 - Day-old rice works way better than fresh - it's less sticky and makes perfect fried rice
02 - Feel free to toss in whatever veggies you've got in your fridge
03 - Want to make it heartier? Add some chicken, shrimp, or tofu
