Set your oven to 425°F (220°C) and let it heat up while you prepare the flatbreads.

Place the flatbreads on a baking sheet lined with parchment paper. Lightly brush the edges of each flatbread with olive oil.

Bake the flatbreads in the preheated oven for about 5 minutes, or until they're warmed through and just starting to crisp.

Remove the flatbreads from the oven. Spread buffalo sauce evenly over both flatbreads. Top with diced chicken, shredded mozzarella cheese, and drizzle blue cheese dressing on top.

Return the flatbreads to the oven and bake for another 12-15 minutes, or until the edges are slightly browned. For extra browning, place under the broiler on high for 1-2 minutes at the end.

Take the flatbreads out of the oven and sprinkle with sliced green onions. Add extra buffalo sauce or blue cheese dressing if desired before serving.
