Fusion Pasta Dish (Print Version)

# Ingredients:

01 - 9 oz cheese tortellini
02 - 1 lb ground beef

→ Vegetables and Aromatics

03 - 1 small onion, chopped
04 - 2 cloves garlic, minced

→ Seasonings

05 - 1 tablespoon chili powder
06 - 1 teaspoon ground cumin
07 - 1 teaspoon paprika
08 - ½ teaspoon salt
09 - ½ teaspoon black pepper

→ Sauce and Cheese

10 - 1 (10 oz) can enchilada sauce (red or green)
11 - 1 cup shredded mozzarella cheese
12 - 1 cup shredded cheddar cheese
13 - ¼ cup sour cream

→ Garnish

14 - Fresh cilantro, chopped

# Instructions:

01 - Cook the tortellini according to package directions. Drain and set aside.
02 - Brown the ground beef in a large skillet over medium heat, breaking it apart while cooking. Drain excess fat.
03 - Add the onion and garlic to the beef. Cook for 2-3 minutes until the onion softens.
04 - Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute to toast the spices.
05 - Add the enchilada sauce and simmer for 5 minutes to blend the flavors. Add the cooked tortellini and toss to coat.
06 - Top with mozzarella and cheddar cheese. Cover and cook on low for 2-3 minutes until melted.
07 - Remove from heat, stir in the sour cream. Garnish with cilantro and serve hot.
