Grilled Chicken Avocado Cheese Sandwich (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 boneless skinless chicken breasts
02 - 1 ripe avocado, sliced
03 - 4 slices cheese (Swiss, cheddar, or provolone)
04 - 4 slices bread (sourdough or ciabatta)

→ Spreads & Seasonings

05 - 2 tablespoons mayonnaise
06 - 1 tablespoon Dijon mustard
07 - Salt and pepper to taste
08 - 1 tablespoon olive oil
09 - Butter or olive oil for grilling

→ Fresh Toppings

10 - 1 small red onion, thinly sliced
11 - 1 tomato, sliced

# Instructions:

01 - Season chicken with salt and pepper. Cook in olive oil over medium-high heat for 6-7 minutes per side until done. Let rest, then slice.
02 - Slice avocado, tomato, and onion. Mix mayo with Dijon mustard and spread on bread slices.
03 - Layer chicken, avocado, cheese, onion, and tomato on bread. Top with second slice, spread side down.
04 - Cook sandwiches in buttered skillet over medium heat, 3-4 minutes each side, until golden and cheese melts.
