# Instructions:

01 - In a large bowl, combine olive oil, cumin, paprika, turmeric, cinnamon, minced garlic, lemon juice, salt, and pepper. Mix well to form a paste-like marinade.
02 - Add the chicken thighs to the marinade and coat thoroughly, ensuring each piece is well covered. Cover the bowl and refrigerate for at least 1 hour or preferably overnight for deeper flavor.
03 - Remove the chicken from the refrigerator 20 minutes before cooking to bring it to room temperature. Choose your cooking method: grill for 6-7 minutes per side, bake at 425°F for 25-30 minutes, or pan-sear for 5-6 minutes per side until fully cooked with a slight char.
04 - While the chicken cooks, combine Greek yogurt, mayonnaise, lemon juice, minced garlic, salt, and pepper in a small bowl. Whisk until smooth. Refrigerate until ready to use.
05 - Let the cooked chicken rest for 5 minutes, then slice it into thin strips across the grain.
