Sweet Breakfast Bake For Crowds (Print Version)

# Ingredients:

→ For the Casserole

01 - 2 (12.4 oz) cans of refrigerated cinnamon rolls with icing
02 - 6 large eggs
03 - 1 cup milk (whole or 2%)
04 - 1 teaspoon vanilla extract
05 - 1 teaspoon ground cinnamon
06 - ¼ teaspoon nutmeg (optional)
07 - ½ cup maple syrup (plus more for serving)

→ For Topping

08 - Reserved icing from cinnamon roll packages
09 - 1 cup fresh berries (optional)
10 - Powdered sugar for dusting (optional)
11 - Additional maple syrup for serving

# Instructions:

01 - Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray.
02 - Open the cinnamon roll cans and set aside the icing. Cut each cinnamon roll into quarters and place the pieces evenly in the bottom of the prepared baking dish.
03 - In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and nutmeg until thoroughly combined.
04 - Pour the egg mixture evenly over the cinnamon roll pieces, ensuring they are all coated. Use a spatula to gently press down the mixture to help absorb the liquid.
05 - Drizzle the maple syrup over the top of the casserole, distributing it evenly.
06 - Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
07 - While the casserole is baking, warm the icing from the cinnamon roll cans until it can be easily drizzled (you can do this in the microwave for about 10-15 seconds).
08 - Once baked, remove the casserole from the oven and let it cool for a few minutes. Drizzle the warm icing on top, then add fresh berries if using. Dust with powdered sugar if desired and serve warm with extra maple syrup on the side.

# Notes:

01 - This casserole can be prepared the night before. Simply assemble everything except the maple syrup, cover and refrigerate. Add the maple syrup just before baking in the morning.
02 - For a richer version, you can substitute half-and-half or heavy cream for the milk.
03 - Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave.
