Sweet Rolled French Toast Bites (Print Version)

# Ingredients:

→ For the Roll-Ups

01 - 10 slices white sandwich bread, crusts removed
02 - 3 tablespoons butter, melted
03 - 3 tablespoons brown sugar
04 - 2 tablespoons ground cinnamon

→ For the French Toast Coating

05 - 3 large eggs
06 - 1 tablespoon milk
07 - ½ teaspoon ground cinnamon
08 - ½ teaspoon vanilla extract

→ For Cooking

09 - 2-3 tablespoons butter for frying

# Instructions:

01 - Cut off those bread crusts and give each slice a good roll with your rolling pin to flatten it out nicely.
02 - Mix together your melted butter, brown sugar, and 2 tablespoons cinnamon in a small bowl until well combined.
03 - Spread some of that yummy cinnamon mixture on each flattened bread slice, leaving a little space at the edges. Roll each slice up tight and give the edges a gentle press to seal.
04 - In a shallow bowl, whisk up your eggs, milk, remaining cinnamon, and vanilla until well mixed.
05 - Get your skillet warm over medium heat with some butter. Dip each roll in the egg mix, then cook them in the skillet, turning until they're golden brown all over - about 2-3 minutes total.

01 - Fresh, soft bread works best for easy rolling
02 - Don't soak the rolls too long in the egg mixture
03 - Can make ahead and reheat when needed
04 - Freezes well for up to a month
