Sweet French Toast Muffins (Print Version)

# Ingredients:

→ For the Muffins

01 - 4 cups day-old bread, cut into 1-inch cubes
02 - 4 large eggs
03 - 1 cup whole milk
04 - 1/2 cup heavy cream
05 - 1/4 cup granulated sugar
06 - 2 teaspoons vanilla extract
07 - 1 teaspoon ground cinnamon

→ For the Cinnamon Sugar Topping

08 - 1/4 cup granulated sugar
09 - 1 teaspoon ground cinnamon
10 - 2 tablespoons melted butter

# Instructions:

01 - Start by cutting your day-old bread into bite-sized 1-inch cubes and set them aside in a bowl.
02 - In a large bowl, whisk together your eggs, milk, cream, sugar, vanilla, and cinnamon until everything is well combined and smooth.
03 - Gently fold the bread cubes into your custard mixture, making sure each piece gets a good coating. Let everything hang out for about 10 minutes so the bread can soak up all that delicious custard.
04 - While your bread is soaking, preheat your oven to 350°F (175°C). Grease up a 12-cup muffin tin or pop in some paper liners.
05 - Divide your soaked bread mixture evenly between the muffin cups. Give each one a gentle press down to make sure they're snug.
06 - Mix up your cinnamon and sugar in a small bowl. Drizzle each muffin with some melted butter, then sprinkle them generously with your cinnamon-sugar mixture.
07 - Pop them in the oven for 20-25 minutes. You'll know they're done when they're golden brown and a toothpick comes out clean.
08 - Let them cool in the pan for a few minutes, then transfer to a wire rack. These beauties are delicious warm or at room temperature, especially with a drizzle of maple syrup!

# Notes:

01 - These muffins are perfect for meal prep - you can prepare the custard mixture and soak the bread the night before.
02 - Feel free to experiment with different spices like nutmeg or cardamom for your own unique twist.
03 - Try serving them with a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.
