Classic Canadian Butter Tarts (Print Version)

# Ingredients:

→ For the Pastry

01 - 2 1/2 cups all-purpose flour
02 - 1/2 teaspoon salt
03 - 1 cup cold unsalted butter, cubed
04 - 1/4 cup ice water
05 - 1 tablespoon white vinegar

→ For the Filling

06 - 1/2 cup unsalted butter, melted and slightly cooled
07 - 1 cup packed brown sugar
08 - 1/2 cup light corn syrup
09 - 2 large eggs, lightly beaten
10 - 1 teaspoon pure vanilla extract
11 - 1/4 teaspoon salt
12 - 1/2 cup raisins or chopped pecans (optional)

# Instructions:

01 - Mix flour and salt in a bowl. Cut in cold butter until crumbly. Mix ice water with vinegar, then stir into flour mixture just until dough forms. Shape into two discs, wrap, and chill for 30 minutes.
02 - Whisk together melted butter, brown sugar, corn syrup, eggs, vanilla, and salt until smooth. Stir in raisins or pecans if using.
03 - Heat oven to 375°F. Roll dough to 1/8-inch thickness and cut into 4-inch circles. Press circles into a greased muffin tin. Fill each shell about 2/3 full with the sweet mixture.
04 - Bake for 20-25 minutes until filling is set but slightly jiggly and pastry is golden brown. Let cool in the pan for 10 minutes before moving to a wire rack.
