Pork Chops with Bacon Gravy (Print Version)

# Ingredients:

→ For the Pork Chops

01 - 4 bone-in pork chops, about 1/2 inch thick
02 - 1 cup all-purpose flour
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1/2 teaspoon salt
07 - 1/2 teaspoon black pepper
08 - 2 large eggs
09 - 1/4 cup milk
10 - Vegetable oil for frying

→ For the Bacon Gravy

11 - 4 slices bacon, chopped
12 - 3 tablespoons bacon grease
13 - 3 tablespoons all-purpose flour
14 - 2 cups whole milk
15 - Salt and pepper to taste

# Instructions:

01 - Mix flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow bowl. In another bowl, whisk eggs with milk.
02 - Dip each pork chop in flour mixture, then egg mixture, then back in flour. Make sure they're evenly coated.
03 - Heat vegetable oil in a large skillet over medium-high heat. Fry pork chops 3-4 minutes per side until golden and cooked through (145°F inside).
04 - In the same skillet, cook chopped bacon until crispy. Remove bacon but keep 3 tablespoons of the grease in the pan.
05 - Whisk flour into the bacon grease for 1-2 minutes. Slowly pour in milk, stirring constantly until it thickens.
06 - Stir crispy bacon back into the gravy, season with salt and pepper. Pour hot gravy over your crispy pork chops.

01 - Use a meat thermometer to check that pork reaches 145°F for food safety
02 - Keep cooked pork chops warm in a low oven while making the gravy
