Sweet Citrus Cranberry Chicken Dinner (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 boneless skinless chicken breasts or thighs
02 - 1 cup fresh cranberries
03 - 1 large orange, zested and juiced
04 - 2 tablespoons honey or maple syrup
05 - 1 tablespoon olive oil

→ Seasonings & Aromatics

06 - 2 cloves garlic, minced
07 - 1 teaspoon fresh thyme or rosemary (or ½ teaspoon dried)
08 - Salt and pepper to taste
09 - ½ cup chicken broth or water

→ Optional Add-ins

10 - 1 tablespoon balsamic vinegar
11 - 1 teaspoon Dijon mustard

# Instructions:

01 - Give your chicken a good seasoning with salt, pepper and some thyme or rosemary. If you've got time, let it marinate for 30 minutes.
02 - Get your skillet hot with olive oil over medium-high heat. Cook the chicken until golden brown, about 4-6 minutes each side. Set it aside for now.
03 - In the same pan, cook the garlic until fragrant, then add cranberries, orange juice and zest, and honey. Let it simmer until cranberries burst and sauce thickens, about 5-7 minutes.
04 - Put the chicken back in, add broth, and spoon sauce over top. Cover and simmer on low for 10-12 minutes until chicken is fully cooked to 165°F.
05 - Spoon that gorgeous sauce over your chicken and finish with some fresh herbs or orange zest if you're feeling fancy.
