Creamy White Chicken Chili (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 cups cooked chicken, shredded
02 - 2 cans (15 oz each) white beans, drained and rinsed
03 - 1 can (4 oz) green chilies
04 - 4 cups chicken broth
05 - 1 cup frozen corn (optional)
06 - 1 medium onion, diced
07 - 2 cloves garlic, minced

→ Seasonings

08 - 1 teaspoon ground cumin
09 - 1 teaspoon chili powder
10 - 1/2 teaspoon smoked paprika
11 - Salt and pepper to taste

→ For Creaminess

12 - 4 ounces cream cheese, softened
13 - 1/2 cup heavy cream

# Instructions:

01 - Cook your diced onion and garlic in a large pot over medium heat until they're soft and smell amazing.
02 - Stir in the green chilies and all your spices - cumin, chili powder, paprika, salt, and pepper.
03 - Pour in the chicken broth and let it come to a nice simmer. Add your chicken, beans, and corn if you're using it. Let everything cook together for 15-20 minutes.
04 - Stir in your softened cream cheese until it's completely melted, then add the heavy cream. Keep stirring until everything's smooth and well mixed.
05 - Ladle into bowls while hot and top with your favorite garnishes like cheese, cilantro, or a squeeze of lime.

# Notes:

01 - Mash some of the beans before adding them if you want a thicker chili
02 - Add diced jalapeños or cayenne if you want more heat
03 - The corn is optional but adds nice color and sweetness
