Beat eggs in one bowl. In another, mix panko breadcrumbs, Parmesan, garlic powder, paprika, onion powder, salt, and pepper.

Dip each chicken strip in beaten egg, then coat in breadcrumb mixture. For extra crunch, repeat the process for a double coating.

Preheat oven to 400°F (200°C). Place breaded tenders on a lined baking sheet with wire rack. Spray lightly with olive oil.
