In a medium saucepan, combine water, sugar, salt, and vegetable oil. Bring to a boil over medium-high heat.

Remove the saucepan from heat and stir in the flour until smooth. Let the dough cool for 10 minutes.

In a large pan, heat 2 quarts of oil to 375°F (190°C) for frying.

Transfer the cooled dough to a piping bag fitted with a star tip.

Pipe strips of dough into the hot oil. Fry for 2 minutes per side until golden and crispy. Drain on paper towels.

Mix sugar and cinnamon in a shallow dish. Toss the fried churros in the mixture until fully coated.
