01 - 8 oz dried noodles, spaghetti or Chinese wheat noodles
02 - 2 tablespoons vegetable oil
03 - 1 tablespoon ginger, minced
04 - 3 garlic cloves, minced
05 - ½ cup green onions, chopped
06 - ½ cup snow peas, trimmed

→ Sauce Ingredients

07 - ¼ cup soy sauce
08 - 2 tablespoons rice vinegar
09 - 2 tablespoons Szechuan chili paste or sauce
10 - 1 tablespoon hoisin sauce
11 - 1 teaspoon sugar
12 - ½ cup chicken or vegetable broth

13 - Crushed peanuts or sesame seeds

# Instructions:

01 - Bring a large pot of water to a boil and cook the noodles according to the package instructions. Drain and set aside.
02 - In a small bowl, whisk together soy sauce, rice vinegar, Szechuan chili paste, hoisin sauce, sugar, and chicken or vegetable broth until well combined. Set aside.
03 - In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced ginger and garlic, and sauté for about 1-2 minutes until fragrant.
04 - Add the snow peas to the pan. Stir-fry for about 2-3 minutes until the vegetables are tender but still crisp.
05 - Add the cooked noodles to the pan, pour in the sauce mixture, and toss everything together until well-coated and heated through, about 2-3 minutes.
06 - Remove from heat, sprinkle with chopped green onions, and garnish with crushed peanuts or sesame seeds if desired. Serve immediately.
