Start by warming up your oven to 300°F (150°C). While it's heating, grab a baking sheet and line it with parchment paper. Carefully separate your eggs - whites in one bowl, yolks in another.

Sprinkle the cream of tartar over your egg whites. Now, grab your mixer and whip those whites until they form beautiful stiff peaks - they should stand up straight when you lift the beaters!

In your bowl with the yolks, add your smooth blended cottage cheese, salt, and if you're using them, the cornstarch and sweetener. Mix until everything's well combined and smooth.

Here's where we need to be extra gentle - add your fluffy egg whites to the yolk mixture in three parts, folding carefully with a spatula. We want to keep all that lovely air in there!

Spoon the mixture onto your prepared baking sheet, making 6-8 round clouds. Use the back of your spoon to shape them into even circles.

Pop them in your preheated oven for 25-30 minutes. You're looking for a lovely golden brown color. Once done, let them cool completely on the baking sheet - patience is key here!
