Lay out each tortilla and spread nacho cheese sauce down the center. Add 1/4 of the beef, 1/2 cup rice, chipotle mayo, sour cream (if using), and tortilla strips for crunch.

Fold in the sides of each tortilla, then roll up tightly from the bottom to secure all the fillings inside.

Heat a non-stick skillet over medium heat. Sprinkle 1/4 cup of cheese directly onto the pan, then place a burrito seam-side down on top. Cook until the cheese forms a golden crust.

Flip the burrito, add another 1/4 cup cheese to the pan, and cook until crispy. Remove and repeat with remaining burritos.
