Quick Teriyaki Turkey & Vegetables (Print Version)

# Ingredients:

→ For the Teriyaki Sauce

01 - ¼ c soy sauce
02 - 3 T brown sugar
03 - 1 c water, divided
04 - 2 T honey
05 - 3 garlic cloves, minced
06 - 1 tsp fresh ginger grated or minced
07 - 2 T corn starch
08 - 1 T orange zest

→ For the Stir Fry

09 - 1 lb Turkey
10 - 2 tsp sesame oil
11 - 3 c broccoli florets fresh or frozen
12 - 1 small onion small diced
13 - 1 cup shredded carrots
14 - salt and pepper to taste as desired

→ For Serving (Optional)

15 - Cooked rice or cauliflower rice
16 - Sliced green onions
17 - Sesame seeds

# Instructions:

01 - Add 3/4 cup of water to a small saucepan along with the soy sauce, minced garlic, grated ginger, honey, and brown sugar. Place over medium heat and stir to combine these ingredients thoroughly. The mixture should be well blended before it comes to a boil.
02 - Bring the sauce mixture to a low boil. While it's heating, whisk together the remaining 1/4 cup water and cornstarch in a small bowl until the cornstarch is completely dissolved, creating what's called a slurry. Once the sauce is gently boiling, slowly pour in the cornstarch slurry while continuously stirring. The sauce will begin to thicken within a minute or two.
03 - As soon as the sauce reaches your desired thickness, remove it from the heat immediately to prevent over-thickening. Stir in the orange zest, which adds a bright, citrusy note to balance the sweetness. Set the sauce aside while you prepare the rest of the stir fry.
04 - Heat the sesame oil in a large wok or skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until it begins to soften and become translucent. This creates a flavor base for the stir fry.
05 - Add the ground turkey to the skillet with the onions. Break it up with a wooden spoon or spatula as it cooks, stirring frequently to ensure it browns evenly. Continue cooking until the turkey is fully cooked through with no pink remaining, about 7-10 minutes. The internal temperature should reach 165°F for safety.
06 - Once the turkey is cooked, add the broccoli florets and shredded carrots to the skillet. Continue to stir fry for about 5 minutes until the vegetables are heated through and tender-crisp. If using frozen broccoli, it may take a minute or two longer.
07 - Reduce the heat to low and pour the prepared teriyaki sauce into the skillet with the turkey and vegetables. Stir gently to coat everything evenly with the sauce. Allow the mixture to simmer for 2-3 minutes so the flavors can meld together.
08 - Serve the ground turkey teriyaki stir fry hot over cooked rice or cauliflower rice if desired. For a nice presentation, you can garnish with sliced green onions and a sprinkle of sesame seeds before serving.

# Notes:

01 - You can substitute ground chicken, pork, or beef for the turkey if preferred. If using beef, be sure to drain excess grease after browning.
02 - For those who enjoy spicy food, add red pepper flakes, cayenne pepper, or a drizzle of sriracha to the sauce.
03 - Feel free to customize with additional vegetables like bell peppers, snow peas, water chestnuts, or baby corn.
04 - If your sauce becomes too thick, simply add water 1 tablespoon at a time until it reaches your desired consistency.
