Heat the olive oil and 1 tablespoon of butter in a large frying pan over medium to medium-high heat. Allow the butter to melt completely and the mixture to get hot before adding the chicken.

While the pan is heating, slice the chicken breasts lengthwise to create four thinner pieces. This helps the chicken cook faster and more evenly. Season both sides of the chicken pieces with kosher salt and freshly cracked black pepper, then coat them evenly with the all-purpose flour, shaking off any excess.

Once the pan is hot, add the floured chicken pieces, being careful not to overcrowd the pan (cook in batches if necessary). Cook for 4-5 minutes on each side until they develop a beautiful golden-brown crust and are cooked through. Remove the chicken from the pan and set aside on a plate.

Reduce the heat to medium-low and add the remaining tablespoon of butter to the same pan. Once melted, add the thinly sliced garlic and cook for 30-60 seconds, just until fragrant but not browned. Be careful not to burn the garlic as it can become bitter.

Pour in the soy sauce and seasoned rice vinegar, using a wooden spoon or spatula to scrape up all the flavorful browned bits from the bottom of the pan. Stir in the honey, along with a bit more freshly cracked black pepper and a pinch of salt if needed (taste first, as soy sauce is already salty).

Allow the sauce to simmer for 4-5 minutes, stirring occasionally, until it has thickened slightly and developed a glossy appearance. The sauce should coat the back of a spoon but still remain pourable.

Return the cooked chicken pieces to the pan, turning them to coat thoroughly in the honey garlic sauce. Let everything simmer together for about 1 minute until the chicken is warmed through and has absorbed some of the sauce flavors.

Transfer the chicken to serving plates and spoon extra sauce over the top. Garnish with thinly sliced green onions for a pop of color and fresh flavor. Serve immediately while hot, perhaps with rice or vegetables on the side to soak up the delicious sauce.
