# Ingredients:

01 - 1 1/2 cups all-purpose flour
02 - 1 teaspoon baking powder
03 - 1/2 teaspoon salt
04 - 1/2 cup unsalted butter, softened to room temperature
05 - 1 cup granulated sugar
06 - 2 large eggs
07 - 1 teaspoon vanilla extract

08 - 1/2 cup sour cream
09 - 1 cup crushed pineapple, well drained

→ Glaze

10 - 1/2 cup powdered sugar
11 - 2 tablespoons pineapple juice

# Instructions:

01 - Heat your oven to 350°F (175°C) and prepare your loaf pan by greasing it and giving it a light coating of flour.
02 - Whisk together your flour, baking powder, and salt in a medium bowl until well combined.
03 - Beat the softened butter and sugar together with an electric mixer until it's light and fluffy - this is important for a tender cake!
04 - Beat in your eggs one at a time, then add the vanilla. Now alternate between adding your dry ingredients and sour cream, starting and ending with the dry mix. Just mix until everything comes together.
05 - Gently fold in your well-drained crushed pineapple, pour the batter into your pan, and bake for 50-60 minutes until a toothpick comes out clean.
06 - Once the cake has cooled completely, mix up your glaze with powdered sugar and pineapple juice, then drizzle it all over the top.
