Throw the oil, soy sauce, brown sugar, lemon juice, garlic, ginger, chilli and lemongrass into a food processor or blender and blitz until smooth. Give it a taste and add salt if needed.

Put the chicken wings in a large bowl, pour the marinade over them and toss until well coated. Cover the bowl and let them marinate for at least 30 minutes, but overnight in the fridge is even better if you have time.

When you're ready to cook, arrange the wings in a single layer in your air fryer basket. Don't crowd them - you might need to cook in batches depending on your air fryer size.

Cook at 200°C/390°F for 15-20 minutes. Flip the wings halfway through cooking for even caramelization. They're done when they're nicely browned and completely cooked through.

While the wings are cooking, toast the peanuts in a dry pan over medium heat or in a hot oven for about 5 minutes. Keep an eye on them - you want them just lightly golden brown and fragrant.

Pile the hot wings onto a serving plate and scatter the toasted peanuts, chopped chillies (if using), and spring onions over the top. Serve immediately while they're still sticky and hot.
