Meatball Stew (Print Version)

# Ingredients:

→ Meatballs

01 - 1 lb ground beef (or turkey)
02 - 1/2 cup breadcrumbs
03 - 1/4 cup grated Parmesan cheese
04 - 1 large egg
05 - 1 tsp garlic powder
06 - 1 tsp onion powder
07 - Salt and pepper to taste

→ Stew

08 - 1 tbsp olive oil
09 - 1 onion, diced
10 - 2 carrots, sliced
11 - 2 celery stalks, sliced
12 - 4 cups beef broth
13 - 1 can (14.5 oz) diced tomatoes
14 - 1 tsp dried thyme
15 - 1 tsp paprika
16 - Salt and pepper to taste
17 - Fresh parsley (for garnish)

# Instructions:

01 - In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Form into small meatballs.
02 - In a large pot, heat olive oil over medium heat. Brown meatballs on all sides (about 5-7 minutes). Remove and set aside.
03 - In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
04 - Pour in beef broth and diced tomatoes. Stir in thyme, paprika, salt, and pepper.
05 - Return meatballs to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
06 - Garnish with fresh parsley before serving.

# Notes:

01 - Brown the meatballs in batches to avoid overcrowding the pot.
02 - Customize vegetables by adding potatoes or green beans for extra flavor.
