In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Form into small meatballs.

In a large pot, heat olive oil over medium heat. Brown meatballs on all sides (about 5-7 minutes). Remove and set aside.

In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until softened.

Pour in beef broth and diced tomatoes. Stir in thyme, paprika, salt, and pepper.

Return meatballs to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.

Garnish with fresh parsley before serving.
