Cheesy Egg Muffin Pizzas (Print Version)

01 - 4 king sized English muffins
02 - 1 tablespoon olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 tablespoon butter
06 - 6 large eggs
07 - 2 tablespoons milk
08 - 6 slices bacon
09 - 1½ cups cheddar cheese
10 - 1½ cups shredded Monterey jack cheese

# Instructions:

01 - Preheat the oven to 400°F.
02 - Line a large baking sheet with edges with aluminum foil. Arrange slices of bacon on the foil in a single layer. Cook bacon in preheated oven for 15 minutes, or until slightly crispy but not brittle. Remove bacon to paper towels and pat dry, then crumble or chop into ½-inch pieces.
03 - While the bacon is cooking, melt butter in a medium skillet over medium heat. Whisk eggs together with milk and pour into hot skillet. Scramble the eggs to a soft set stage (just barely set but with no more liquid egg).
04 - Open the English muffins and place on a baking sheet. Brush each with olive oil, then sprinkle with garlic and onion powder, to taste.
05 - Divide the cheddar cheese between all the muffin halves, then do the same with the scrambled egg, crumbled bacon, and Monterey jack cheese.
06 - Bake mini pizzas for 10 minutes or until cheese is melted.
07 - Allow to cool significantly before serving, especially to children. The toppings stay very hot for a pretty long time.

# Notes:

01 - Normal size English muffins will work for this recipe, but will of course make smaller pizzas. You will need more than 4 to accommodate all the toppings if using regular-sized muffins.
02 - Either scale back the eggs, bacon, and cheese, or just make more pizzas if using regular-sized English muffins.
03 - These mini pizzas get gobbled up quickly, so making extra is always a good choice!
