Preheat the oven to 400°F (200°C). Grease or line a mini muffin tin.

In a skillet over medium-high heat, cook and crumble the breakfast sausage. Drain excess grease and set aside.

In a mixing bowl, combine pancake mix and water until smooth. Fold in the cooked sausage, shredded cheese, and maple syrup.

Fill each muffin cup about ¾ full with the batter.

Bake for 12–15 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.

Let the bites cool for a few minutes before removing them from the tin. Serve with extra maple syrup if desired.
