01 - 1 pound flank steak, cut into thin strips against the grain
02 - 1 red bell pepper, sliced into strips
03 - 1 green bell pepper, sliced into strips
04 - 1 yellow bell pepper, sliced into strips
05 - 1 medium onion, thinly sliced
06 - 2 tablespoons vegetable oil for cooking

07 - 1/4 cup soy sauce
08 - 2 tablespoons oyster sauce
09 - 1 tablespoon cornstarch
10 - 2 tablespoons water
11 - 1 tablespoon rice vinegar
12 - 1 tablespoon honey or brown sugar for sweetness
13 - 2 cloves fresh garlic, minced
14 - 1 teaspoon freshly grated ginger
15 - 1 teaspoon sesame oil
16 - 1/2 teaspoon red pepper flakes (optional for heat)

# Instructions:

01 - Mix together your sauce ingredients in a bowl: soy sauce, oyster sauce, cornstarch, water, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and red pepper flakes if you're adding some heat. Give it a good whisk until everything's well combined.
02 - Get your large skillet or wok nice and hot over medium-high heat with a tablespoon of vegetable oil. Add those beef strips and stir-fry them until they're just browned and cooked through - about 2-3 minutes should do it. Take them out and set aside for now.
03 - In the same pan, add your remaining oil and toss in those colorful bell peppers and onions. Give them a good stir-fry for about 4-5 minutes - you want them tender but still with some nice crunch.
04 - Now's the time to reunite everything! Put the beef back in the pan, pour in your prepared sauce, and stir everything together. Let it bubble away for 2-3 minutes until the sauce gets nice and thick, coating everything beautifully.
05 - Dish it up while it's hot! It's fantastic over some steamed rice or noodles. Feel free to sprinkle some sesame seeds or chopped green onions on top for extra flair.

01 - Use any combination of bell peppers you have on hand - the more colors, the prettier the dish!
02 - No oyster sauce? No problem! Hoisin sauce or extra soy sauce works great too.
