Simple Italian Chicken Parmigiana (Print Version)

01 - 4 boneless, skinless chicken breasts
02 - 1 cup all-purpose flour
03 - 2 large eggs, beaten
04 - 1 1/2 cups Italian-style breadcrumbs
05 - 1/2 cup grated Parmesan cheese
06 - 1 cup marinara sauce
07 - 1 1/2 cups shredded mozzarella cheese
08 - 1/4 cup grated Parmesan cheese (for topping)
09 - 1/4 cup chopped fresh basil or parsley (optional)
10 - Olive oil, for frying
11 - Salt and pepper, to taste
12 - Pasta of choice, for serving (optional)

# Instructions:

01 - Preheat your oven to 375°F (190°C).
02 - Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, and then coat with breadcrumbs mixed with 1/2 cup Parmesan cheese.
03 - Heat olive oil in a large skillet over medium-high heat. Fry the chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
04 - Spread a thin layer of marinara sauce in a baking dish. Place the fried chicken on top, then spoon more marinara sauce over each piece. Sprinkle with shredded mozzarella and remaining Parmesan cheese.
05 - Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly. For a crispier top, switch to the broil setting for the last 2-3 minutes.
06 - Garnish with fresh basil or parsley, if desired. Serve hot with pasta, garlic bread, or a side salad.
