In a small bowl, mix together the salt, pepper, garlic powder, onion powder, and smoked paprika.

Divide the ground beef into 3-ounce portions and roll them into balls. You should have 8 balls.

Preheat your flat-top grill to medium heat. Cook the bacon until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain.

Add the butter to the grill and let it melt. Toss in the sliced onions and coat them in the butter. Season with about 1/4 of the seasoning mix. Cook, stirring frequently, until the onions are soft and golden brown, about 8-10 minutes. Remove from the grill.

Increase the heat to high and grease the grill with vegetable oil.

Season the top of each beef ball with some of the seasoning mix. Place them seasoning-side down on the grill. Using parchment paper and a weight, smash each ball into a thin patty, focusing on the edges.

Season the smashed side of the patties. Cook until the edges are crispy and browned, about 2 minutes. Flip the patties using a scraper.

Brush the cooked side with BBQ sauce and immediately place a slice of Cheddar cheese on each patty. Cook until the cheese melts, about 2 minutes.

For double burgers, stack two patties together. Serve immediately on buns with bacon and caramelized onions.
