# Ingredients:

01 - 1 cup peaches, peeled and diced
02 - 1/2 cup vegetable oil
03 - 1/2 cup sugar
04 - 2 eggs
05 - 1/2 cup sour cream
06 - 1 teaspoon vanilla extract
07 - 1 1/2 cups flour
08 - 1 teaspoon baking soda
09 - 1/2 teaspoon salt

# Instructions:

01 - Preheat oven to 350 degrees and spray 3 mini loaf pans or 1 large loaf pan with non-stick cooking spray.
02 - In a medium bowl, combine the peaches, oil, sugar, eggs, sour cream, and vanilla extract.
03 - Stir in the flour, baking soda, and salt, mixing until just combined.
04 - Pour batter evenly into prepared pans. Place pans in preheated oven and bake for 25-30 minutes if using mini loaves, or 50-55 minutes if using a large loaf pan.
05 - Remove from oven and allow to cool slightly before slicing and enjoying!

01 - This quick bread requires no yeast and comes together with simple pantry ingredients.
02 - Fresh or canned peaches can be used in this recipe. If using canned, make sure to drain them well.
03 - The bread freezes well for up to 3 months if wrapped tightly in plastic wrap and aluminum foil.
