Easy Strawberry Cheesecake Quesadillas (Print Version)

# Ingredients:

→ For the Quesadillas

01 - 4 large flour tortillas
02 - 1 cup cream cheese, softened
03 - 1/2 cup powdered sugar
04 - 1 teaspoon vanilla extract
05 - 1 cup fresh strawberries, hulled and sliced
06 - 1/2 teaspoon cinnamon
07 - 2 tablespoons butter, for frying

→ For Serving

08 - Extra sliced strawberries
09 - Whipped cream

# Instructions:

01 - In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
02 - Spread an even layer of the cream cheese mixture over half of each tortilla, leaving a little space around the edges. Layer the sliced strawberries on top of the cream cheese mixture, then fold the tortillas in half to create a quesadilla.
03 - In a large skillet over medium heat, melt 1 tablespoon of butter. Place 2 quesadillas in the skillet and sprinkle lightly with cinnamon. Cook for about 2-3 minutes or until the bottom is golden brown, then carefully flip and cook for another 2-3 minutes on the other side until golden and crispy. Repeat with the remaining quesadillas, adding more butter to the skillet if necessary.
04 - Remove the quesadillas from the skillet and let them cool slightly before slicing into wedges. Serve warm with additional sliced strawberries and whipped cream on the side for dipping.
