Nostalgic Ice Cream Inspired Treats (Print Version)

# Ingredients:

→ Cupcakes

01 - 2 tablespoons vegetable oil
02 - 4 egg whites
03 - 1 1/3 cups water
04 - 1 cup granulated sugar
05 - 1 teaspoon vanilla
06 - 1 teaspoon salt
07 - 1 box white cake mix
08 - 1 cup all-purpose flour
09 - 1 cup sour cream (8oz container)

→ Frosting

10 - 1 cup butter, softened
11 - 8 cups powdered sugar
12 - 2 teaspoons vanilla
13 - 8 ounces cream cheese, softened
14 - 2-4 tablespoons heavy cream

→ Toppings

15 - 12 fresh strawberries
16 - 20 Golden Oreos
17 - 3.4 oz box strawberry Jello powder
18 - 4 tablespoons butter, melted

# Instructions:

01 - Pre-heat oven to 325°F.
02 - In the bowl of a mixer, mix together the oil, egg whites, water, and vanilla. Mix on low for about 10 seconds.
03 - In a large bowl, mix together cake mix, flour, sugar, and salt.
04 - Slowly add the dry mix a little at a time to the wet ingredients. Mix on low until everything is combined. Add sour cream and mix well.
05 - Line a muffin/cupcake tin with paper liners. Fill each cupcake liner about 3/4 full of batter.
06 - Bake at 325°F for 25 minutes. Remove from oven and cool.
07 - Cream butter in the bowl of a mixer. Add cream cheese and mix well. Slowly add powdered sugar while mixing. Add vanilla and heavy cream and mix until combined. Add 1 tablespoon of heavy cream at a time until desired consistency is reached.
08 - Roughly crush Golden Oreos and pour into a bowl. Mix in strawberry Jello powder and melted butter. Stir well.
09 - Use a piping bag fitted with a 2D Drop Flower Decorating Tip to swirl the frosting onto the cupcakes. Then sprinkle the strawberry crunch topping onto cupcakes. Top each cupcake with a sliced strawberry.

01 - These cupcakes are inspired by the classic Strawberry Crunch ice cream bars from the ice cream truck.
02 - For the frosting, add 1 tablespoon of heavy cream at a time until desired consistency is reached.
03 - You can prepare the strawberry crunch topping ahead of time and store in an airtight container.
