01 - 2 cups mashed potatoes (leftover or freshly made)
02 - 1 cup shredded cheese (cheddar, mozzarella, or your choice)
03 - 1/2 cup cooked bacon, crumbled (or sautéed vegetables for vegetarian option)
04 - 1/4 cup green onions, chopped (optional)

→ Seasonings and Coatings

05 - 1 teaspoon garlic powder
06 - Salt and pepper, to taste
07 - 1 cup breadcrumbs (for coating)
08 - Oil for frying

# Instructions:

01 - In a mixing bowl, combine mashed potatoes, shredded cheese, crumbled bacon (or vegetables), green onions, garlic powder, salt, and pepper. Mix until well combined.
02 - Shape the mixture into 2-3 inch diameter patties. Roll each patty in breadcrumbs, coating them evenly on all sides.
03 - Heat oil in a large skillet over medium heat. Fry the potato cakes in batches for 3-4 minutes per side until they're golden brown and crispy.
