Creamy Italian Tortellini Carbonara Dish (Print Version)

01 - 9 ounces refrigerated cheese tortellini
02 - 8 strips bacon, finely chopped
03 - 3 cloves garlic, minced
04 - 2 cups heavy whipping cream
05 - 1 cup Parmesan cheese, freshly grated
06 - ½ cup fresh parsley, chopped

# Instructions:

01 - Boil salted water and cook tortellini until al dente according to package. Drain but save some pasta water.
02 - While pasta cooks, fry chopped bacon in a large skillet until crispy, about 5-7 minutes. Remove bacon but keep 1 tablespoon fat in pan.
03 - Cook garlic in bacon fat until fragrant, about 1 minute. Pour in cream and bring to a gentle simmer.
04 - Stir in Parmesan until melted and sauce thickens. Add parsley and most of the bacon bits.
05 - Add tortellini to the sauce, toss well. Add pasta water if needed for desired consistency. Top with remaining bacon and parsley.
