Boil salted water and cook tortellini until al dente according to package. Drain but save some pasta water.

While pasta cooks, fry chopped bacon in a large skillet until crispy, about 5-7 minutes. Remove bacon but keep 1 tablespoon fat in pan.

Cook garlic in bacon fat until fragrant, about 1 minute. Pour in cream and bring to a gentle simmer.

Stir in Parmesan until melted and sauce thickens. Add parsley and most of the bacon bits.

Add tortellini to the sauce, toss well. Add pasta water if needed for desired consistency. Top with remaining bacon and parsley.
