08 - 1/4 teaspoon ground cardamom
09 - 1/4 teaspoon salt

→ For the Filling and Garnish

10 - 1/4 cup cream cheese, softened
11 - 1/4 cup powdered sugar
12 - 1/4 cup caramel sauce for drizzling
13 - Additional chopped pistachios and walnuts for garnish

# Instructions:

01 - Set the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, beat the softened butter and sugar together until light and fluffy.
03 - Add honey to the butter-sugar mixture and mix until well combined.
04 - In a separate bowl, whisk together the flour, cinnamon, cardamom, and salt.
05 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pistachios and walnuts.
06 - Roll the dough into small balls and slightly flatten them with your palm. Place them on the prepared baking sheet and bake for 10-12 minutes, or until the edges are golden brown.
07 - Allow the cookies to cool completely on a wire rack.
08 - While the cookies are cooling, beat the softened cream cheese and powdered sugar together until smooth.
09 - Once the cookies are cooled, spread a generous amount of cream cheese filling on the flat side of one cookie, and top with another cookie to form a sandwich.
10 - Drizzle caramel sauce over each sandwich cookie and garnish with additional chopped pistachios and walnuts.

# Notes:

01 - If you find your cookie dough is too sticky to work with, refrigerate it for 15-20 minutes before shaping the cookies. This helps make the dough easier to handle and improves the cookie's structure.
02 - Use a small cookie scoop to ensure that each cookie is the same size. This not only makes your cookies look uniform but also ensures even baking.
03 - You can replace pistachios and walnuts with other nuts like almonds or pecans, depending on your preference.
