Soft Banana Blondies (Print Version)

# Ingredients:

→ Crust Ingredients

01 - 16 ounces vanilla wafers (about 1 ½ boxes)
02 - 2 cups butter, melted and divided

→ Blondie Ingredients

03 - 3 cups flour
04 - 1 ½ teaspoons baking soda
05 - 1 teaspoon salt
06 - 1 ¼ cup white sugar
07 - 2 boxes banana pudding (3.4 ounces each)
08 - 3 eggs
09 - 2 teaspoons vanilla
10 - 2 cups white chocolate chips

# Instructions:

01 - Preheat oven to 400 degrees. Spray a 9x13 pan with cooking spray.
02 - In a large plastic baggie, crush vanilla wafers. Set aside one cup. Pour the remaining wafers into a large bowl. Pour in ¾ cup of butter (measure prior to melting) and mix until combined. Press into the bottom of the prepared pan and bake for 5 minutes.
03 - In a large bowl, whisk flour, baking soda, salt, granulated sugar, and dry pudding mix.
04 - Stir in eggs, vanilla, and remaining butter.
05 - Fold in chocolate chips and remaining vanilla wafers.
06 - Spread over prepared crust and bake for 15-20 minutes.

# Notes:

01 - Use unsalted butter to control the amount of salt in the recipe.
02 - Replace baking soda every 6-12 months as it loses its potency over time.
03 - Measure flour by spooning it into a measuring cup and leveling it off with a knife.
04 - Use instant pudding mix, not cook and serve.
05 - Use room temperature ingredients for smooth mixing.
06 - Do not overmix to avoid a tough, dense result.
07 - Do not overbake; they will continue to firm up as they cool.
08 - Cool before slicing.
09 - Serve with whipped cream or vanilla ice cream for an extra decadent treat.
