Quick Chicken Spaghetti Lo Mein (Print Version)

# Ingredients:

01 - 8 ounces spaghetti
02 - 1 pound chicken breast, thinly sliced
03 - 2 tablespoons vegetable oil
04 - 2 cups mixed vegetables (bell peppers, carrots, broccoli)
05 - 3 cloves garlic, minced
06 - 2 green onions, sliced for garnish

→ For the Sauce

07 - 1/4 cup soy sauce
08 - 2 tablespoons oyster sauce
09 - 2 teaspoons sesame oil
10 - 1 teaspoon sugar
11 - 1/2 teaspoon ground ginger
12 - 1/2 cup chicken broth
13 - 1 teaspoon cornstarch mixed with 2 teaspoons water
14 - Salt and pepper to taste

# Instructions:

01 - Cook spaghetti according to package directions. Drain, rinse with cold water, and set aside.
02 - Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken slices, season with salt and pepper, and stir-fry for 5-6 minutes until golden. Remove and set aside.
03 - In the same pan, add remaining oil and sauté garlic for 30 seconds. Add vegetables and stir-fry for 3-4 minutes until tender-crisp.
04 - Return chicken to the pan. Add soy sauce, oyster sauce, sesame oil, sugar, ginger, and broth. Let simmer for 2 minutes, then stir in cornstarch mixture to thicken.
05 - Add cooked spaghetti to the pan and toss everything together until well combined. Garnish with green onions and serve hot.
