# Ingredients:

→ For the Cheesecake Filling

01 - 8 ounces cream cheese, softened to room temperature
02 - 1/4 cup powdered sugar
03 - 1 teaspoon vanilla extract

→ For the Crispy Coating

04 - 1/2 cup all-purpose flour
05 - 1/4 cup cornstarch
06 - 1 teaspoon baking powder
07 - 1/2 teaspoon salt
08 - 1/2 cup milk
09 - 1 large egg

→ For Frying & Coating

10 - Vegetable oil for deep frying
11 - Cinnamon sugar for coating (optional but recommended!)

# Instructions:

01 - Grab your softened cream cheese and mix it up with powdered sugar and vanilla until it's super smooth and creamy. You want this mixture to be totally lump-free!
02 - In a separate bowl, whisk together your flour, cornstarch, baking powder, and salt. Pour in the milk and egg, whisking until you've got a smooth, pancake-like batter.
03 - Using a spoon, scoop out little balls of the cream cheese mixture. Pop these guys onto a tray and stick them in the freezer for at least an hour - this is super important to help them keep their shape!
04 - Heat up your oil to 350°F. Take your frozen cream cheese balls, dip them in the batter, and carefully drop them into the hot oil. Let them sizzle for about 2-3 minutes until they're golden brown and beautiful.
05 - While they're still warm, roll these crispy bites in cinnamon sugar for that extra bit of sweetness. They're best served right away while they're still warm and crunchy!

# Notes:

01 - These little bites are best enjoyed fresh and warm, when the outside is super crispy and the inside is still creamy
02 - Don't skip the freezing step - it's what helps keep your filling from melting into the oil
03 - Try serving these with some chocolate sauce or caramel for dipping
