01 - 2 medium sweet potatoes, peeled if you like and cut into fries
02 - 2 tablespoons good olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon paprika (try smoked paprika for extra flavor)
05 - 1 teaspoon salt
06 - 1/2 teaspoon freshly ground black pepper

07 - 1 tablespoon cornstarch for extra crispiness

# Instructions:

01 - Get your oven super hot - 425°F (220°C). Pop a baking sheet in there while it heats up - this helps make your fries extra crispy.
02 - Peel those sweet potatoes if you want (it's totally optional), then cut them into fries about 1/4 inch thick. Try to keep them all about the same size so they cook evenly.
03 - Soak your cut fries in cold water for 30 minutes. This pulls out extra starch and helps them get nice and crispy later.
04 - Drain those fries and dry them really well with paper towels. Toss them in a bowl with olive oil and all your seasonings. If you're using cornstarch, add it now and give everything a good mix.
05 - Carefully pull out that hot baking sheet and spread your fries in a single layer - don't crowd them! Pop them in the oven for 25-30 minutes, flipping halfway through.
06 - Once they're golden brown and crispy, take them out and let them cool for a few minutes before diving in.
