Roll out the crescent roll dough on a clean surface, pressing the seams together to form a single sheet.

Spread Dijon mustard evenly over the dough, if using.

Layer the ham slices over the dough, covering the entire surface. Follow with the cheese slices.

Starting from one long edge, tightly roll up the dough into a log.

Slice the log into 1-inch pinwheels and place them on the prepared baking sheet.

Brush the tops with melted butter and sprinkle with poppy seeds, if desired.
