# Ingredients:

01 - 1 cup unsalted butter, softened
02 - 3/4 cup sugar
03 - 1 large egg
04 - Zest from 2 limes
05 - 2 cups all-purpose flour
06 - 1/2 teaspoon baking powder
07 - 1/2 teaspoon kosher salt

→ For the Key Lime Glaze

08 - 1 3/4 cups powdered sugar
09 - 2 tablespoons lime juice
10 - 1/4 cup heavy cream
11 - 1 teaspoon rum

# Instructions:

01 - Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper. Set them aside.
02 - In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and lime zest, and mix until well combined.
03 - In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture and stir until everything is well combined.
04 - Using a small cookie scoop or tablespoon, measure out portions of the dough. Roll each portion into a ball, then slightly flatten them with your palm and place them on the prepared cookie sheets.
05 - Bake the cookies for 8-10 minutes or until they are lightly browned on the bottom. Let them sit on the cookie sheet for 2 minutes before transferring them to a cooling rack.
06 - In a medium bowl, whisk together the powdered sugar, lime juice, heavy cream, and rum until smooth.
07 - Once the cookies are cool, dip the tops in the glaze and place them back on the wire rack to set. For a final touch, zest some more limes over the cookies.
