03 - 4 sausage links (or 1/2 pound ground breakfast sausage)
04 - 1/2 cup (60 g) shredded cheese (cheddar, Monterey Jack, or your choice)
05 - 1/4 cup (60 ml) milk
06 - 1 tablespoon butter or oil
07 - Salt and pepper, to taste

09 - 1/4 cup chopped spinach

# Instructions:

01 - Heat a skillet over medium heat. Cook the sausage links until browned and fully cooked (about 8-10 minutes), or cook ground sausage until crumbled and no longer pink. Transfer to a paper towel-lined plate to drain.
02 - In a bowl, whisk together the eggs, milk, salt, and pepper. Heat butter or oil in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and set. Remove from heat.
03 - Lay a tortilla flat and sprinkle cheese in the center. Add scrambled eggs, sausage, and optional add-ins like bell peppers or spinach. Roll the tortilla tightly, tucking in the sides. Repeat with the remaining tortillas.
04 - For a crispy exterior, place the roll-ups seam-side down in a skillet over medium heat. Cook for 1-2 minutes on each side until golden brown.
05 - Serve the roll-ups warm with salsa or your favorite breakfast dips.
