01 - 1 cup cottage cheese
02 - 1 cup self-rising flour

# Instructions:

01 - In a mixing bowl, combine the cottage cheese and self-rising flour. Stir until the mixture forms a soft, sticky dough. If too sticky to handle, add more flour, one tablespoon at a time.
02 - Turn the dough onto a lightly floured surface. Divide into 4 equal portions and flatten each into a round or oval shape, about 1/4-inch thick using a rolling pin or your hands.
03 - Heat a non-stick skillet over medium heat. Cook one flatbread at a time for 2-3 minutes per side, until golden brown spots appear and the bread is cooked through.
04 - Serve warm as is or with your favorite toppings like hummus, avocado, smoked salmon, or a drizzle of honey.
